
2004 Syrah Dessert Wine
Flavor Profile:
Our 2004 Syrah Dessert Wine is autumn in a bottle. The balance of ripe
Syrah fruit and neutral spirits makes for a luscious elixir that coats the throat
with notes of brown sugar, allspice and star anise. This sipping wine is best
served at "cellar" temperature - 55 degrees. Pour with your favorite dessert
or while watching the first leaves of fall tumble from the tree.

Fermentation:
Our 2004 Syrah Dessert Wine was crushed and placed into a 1,300 Gallon
Stainless Steel Fermentation Tank. We cold soaked the juice for three days to
attain maximum color extraction prior to yeast inoculation. Pump overs were
conducted daily. The wine then underwent primary fermentation. On September
23rd we added Aged and Non-aged Brandy and Neutral Spirits. The
wine was pressed on October 21st. The wine was placed into barrels on December
20, 2004
Barrel Aging:
Barrel Aging occurred between December of 2004 and February 2008. Barrels
consisted of 40% new oak, predominantly American Barrels with French
Heads. The balance was placed in one and two year old French barrels

90% Syrah Noir, Contra Costa County, CA
10% Brandy & Neutral Spirits
Bottling:
The wine was bottled on March 4, 2008
Alcohol: 18.0%
